Classic Ricotta Cheese Filling

  • 1 cup ricotta cheese
  • ½ cup Parmesan cheese, grated
  • 1 teaspoon lemon zest
  • 1 pinch nutmeg
  • Salt and black pepper to taste

Spinach & Ricotta Filling

  • 2 cups fresh spinach, washed and chopped
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 cup ricotta cheese
  • ½ cup Parmesan cheese, grated
  • 1 pinch nutmeg
  • Salt and black pepper to taste

Mushroom Ravioli Filling

  • 2 cups mushrooms (shiitake, portobello, or button), finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • ½ cup Parmesan cheese, grated
  • Salt and black pepper to taste

Instructions

  1. Ricotta Cheese Filling: In a mixing bowl, combine ricotta, Parmesan, lemon zest, and nutmeg. Season with salt and pepper and mix until smooth.

  2. Spinach & Ricotta Filling:

    • Heat olive oil in a pan and sauté garlic until fragrant.
    • Add spinach and cook until wilted, then remove from heat and let cool.
    • Mix spinach with ricotta, Parmesan, nutmeg, salt, and pepper until well incorporated.
  3. Mushroom Ravioli Filling:

    • Heat olive oil and butter in a skillet over medium heat.
    • Add garlic and sauté until fragrant, then stir in mushrooms.
    • Cook until mushrooms are soft and golden brown, then let cool.
    • Mix with Parmesan, then season with salt and pepper.

Notes

Chill fillings for 15 minutes before using to make them easier to handle.

For added richness, mix ricotta with goat cheese or fontina.

Drain spinach well to prevent excess moisture in the ravioli.
